Recipes for Healthy, Low Calorie Mini Meals

This blog was born as the result of looking for recipes for mini meals to use while transitioning off of a well-known diet and not finding any! I normally eat 6 meals a day, albeit mini meals and that’s where this blog comes in. My goal is to provide simple, healthy and low-calorie recipes in small amounts that allow you to eat more frequently during the day and who doesn’t love to eat! Come join me at Simply Mini Meals!

What I’ve Been Up To Recently (aka Where Have the Years Gone?)

I started this blog back in 2013 when I was in the process of trying to lose weight after finding myself at 185 lbs.  I was in a job I was enjoying, but didn’t feel good about myself and decided to try and do something about it.  I ended up choosing Medifast and I lost 50 pounds over a year until I got down to 135 lbs.  I ate 6 small meals a day as well as protein and greens and the weight fell off.  I went to Italy for 18 days in Mar/April of 2014 and had the energy to go running around…it was great!

Come December 2014, I found myself out of a job because I was unwilling to uproot my family from sunny San Diego and instead, I decided to brush up on my JavaScript and try to make the move into web development and software engineering.  I’m not sure if it was the stress of losing my job, attending a 12-week intensive software immersion class, trying to find a new job, or a combination of all three, but I ended up putting 20 lbs. back on.

Fast forward to 2016.  I’m in my dream job and loving it and I decided to try and lose that last 20 and let me tell you that it’s been really difficult!  What used to work wasn’t working the same and I’ve been somewhat frustrated.  I’ve managed to drop 10 through watching what I’m eating and walking 10K+ steps at least 5 days a week, but I still want to lost another 10.

I still eat 6 mini meals a day, but I struggle to not snack on other stuff that I shouldn’t or eating too much when we go out to eat and just the daily struggles of getting older!  I’m going to try and start blogging regularly and see where it takes me!
